The "brinz...Thank you for the wonderful posts. The "brinze" cheese you mention above is the regular white Romanian cheese, somehow similiar to Greek feta. It comes in varieties made of of sheep, cows' and goats' milk, sometimes consumed as fresh, sometimes matured in woode vats.
